Chirashi Japanese Shrimp Bowl


  • 1½ cups sushi rice
  • ¼ cup Mizkan® Natural Rice Vinegar
  • 3 Tbsp Mizkan® Mirin
  • 2 Tbsp sugar
  • 1 (8-oz) pkg snow peas
  • 1½ lb cooked peeled and deveined large raw shrimp
  • 1 English cucumber, thinly sliced
  • 2 avocados, sliced
  • ¼ cup pickled ginger


  1. Cook rice according to package directions.
  2. Meanwhile, stir together vinegar, mirin, and sugar in a small microwave-safe bowl. Microwave on HIGH in 30 second intervals, stirring between each, until sugar is dissolved.
  3. Add vinegar mixture to rice and stir gently until absorbed. Divide rice among 6 bowls.
  4. Steam snow peas according to package directions; cool slightly.
  5. Top rice mixture with shrimp, cucumber, avocado, snow peas, and ginger.
