California Roll Bowls

This Healthy Lunch Bowl is inspired by the California Sushi Roll. Best of all it, it’s ready in just 20 minutes!


1 cup instant brown rice

2Tbsp Mizkan Seasoned Rice Vinegar

1 (10-oz) pkg shredded carrots

1 Tbsp less sodium soy sauce

⅓ cup reduced-fat mayonnaise

1 Tbsp Sriracha

1 (8-oz) pkg imitation crab, cut into chunks

1 cup sliced cucumber

1 avocado, thinly sliced

½ (8-oz) pkg organic roasted seaweed chips

1 tsp sesame seeds


  1. Cook rice according to package directions; stir in 1 Tbsp Mizkan Seasoned Rice Vinegar. Toss together carrots, soy sauce, and 1 Tbsp vinegar.
  2. Whisk together mayonnaise and Sriracha in a small bowl.
  3. Divide rice, crab, carrots, cucumber, avocado, and seaweed chips among 4 bowls; drizzle with sriracha mayonnaise, and sprinkle with sesame seeds.
