INSTRUCTIONS

  1. Bring 4 cups water to a boil in medium saucepan on medium heat. Carefully lower cold eggs into water; boil 7 min. Drain, then immediately transfer to bowl of ice water until completely cooled.
  2. Peel eggs and add to quart-size resealable plastic bag with remaining ingredients. Remove as much air as possible before sealing to ensure eggs are completely surrounded by marinade.
  3. Refrigerate at least 6-8 hours to marinate. Cut in half to serve. Refrigerate leftovers for up to 4 days.

TIPS

  • After marinating, the ajitama, or soft-boiled marinated ramen eggs, will have a deeply savory flavor, with a brown exterior and jammy yolks.
  • To prevent eggs from becoming too salty, remove from marinade after 24 hours.
