What is Dashi?

Dashi is a flavorful Japanese stock made with umami-packed aromatic ingredients that serves as a foundational flavor and essential ingredient present in most Japanese dishes. Dashi plays a major role in familiar Japanese favorites like miso soup, ramen noodle soup, udon or soba noodle soup, tare (dipping sauces), sukiyaki, shabu shabu, okonomiyaki and nimono (simmered dishes).

What is Umami?

Literally translated from Japanese as “essence of deliciousness”, Umami, described as a pleasantly savory flavor, is often referred to as “the fifth taste” after sweet, sour, salty and bitter.

 

The deep umami flavor is what sets dashi apart from other stocks. Umami is difficult to identify on its own, but it’s absence is apparent when missing in Japanese dishes that would otherwise taste flat, bland or onedimensional.
